Study on extraction and stability of hypocrellin in shiraia bambusicola hemm

The optimum extracting conditions of hypocrellin in Shiraia bambusicola Hemm were studied by single factor analysis and orthogonal test L9(33).And the stability of hypocrellin was analyzed.The result showed:hypocrellin could be extracted with acetone and the maximum absorbance was at 464nm,the optimum extracting conditions were:the ratio of material to solution was 1∶40,extraction time was 3 hours,at 70℃.The pigment was resistant to heat,light,hydrogen peroxide,sodium pyrosulfite and common food additives,such as cane sugar,citric acid,ascorbic acid,sodium benzoate,potassium sorbate,and little resistance to sodium sulfite.The color of the pigment will be different when the pH value of the pigment changes.The pigment is influenced by Fe2+,Fe3+,Al3+,Cu2+,but Mg2+,Pb2+,Mn2+,Na+,Zn2+,Ca2+ can not badly affect it at all.
