Investigation and analysis of sanitary conditions of centralized cleaning and disinfection of tableware in Guangzhou

Objective In this research,we tried to find out the sanitary conditions of centralized cleaning and disinfection of tableware in Guangzhou,and analyze the acceptability as a general practice.Methods The random inspection method was carried out for tableware from investigated enterprises,and the questionnaire on the spot was also used simultaneously for investigating the process and management of sanitary condition.Results The total percentage of pass of 219 cases from random inspection on disinfection of tableware was 90.41%,the percentage of pass for chopsticks was 65.38%,which was the lowest one.It was concluded that the difference between passing rate of packaging and non-packaging tableware was not statistically significant(P=0.413).The percentage of pass of centralized cleaning and disinfection of tableware was higher than that of self cleaning and disinfection in the medium and small enterprises'(P=0.000),but lower than large-scale enterprises'(P=0.009).Conclusion It is very useful for medium and small enterprises to adopt the centralized cleaning and disinfection of tableware.It is necessary for the government to strengthen supervision and management of this industry.
