Study of phenolic compounds in aleatico grapes dried in a forced air tunnel

Grape drying is a technology used in the production of dessert wines. In this study the phenolic compounds were determined in Aleatico grapes dried in a forced air tunnel. In this system temperature and relative humidity are accurately controlled. The results showed that there was no reduction in the polyphenol content. So this technology opens a new prospect for producing a dessert wine from Aleatico grapes without altering the phenolic compounds which are extremely important for organoleptic characteristics.
